FABLE 163: THE BEE AND JUPITER
By Jupiter's decree we sacrifice these grapes to create a wine that's bright as lightning and smooth as honey. Though tempting to keep this wine for yourself, seek out those with whom to share it with. For generosity can leave a taste far richer than greed.
From the Winemakers
All of the fruit was picked based on acidity to preserve brightness and sent directly to the press. This wine was fermented with native yeast. We fermented and aged 10% of this wine in new oak barrels, 50% of this wine in neutral oak, and the remaining 40% in stainless steel. We utilized daily batonnage on the barrel ferments to balance out the bright acidity.

Drift back to the summers of your youth: Embrace the comforting aromas of Bosc pear, fresh ginger, and coarse sea salt. Savor the fresh mid-palate of marjoram and apple blossom as it glides into a bright, lively finish. Like us, this wine is youthful and energetic but still respects the classics.
