The grapes for Faire La Fête® Brut Rosé Crémant de Limoux are exclusively hand-picked for optimal acidity and fruit profile from specific vineyards within the Haute-Vallée and Autan sub-regions of Limoux. A blend of Chardonnay, Chenin Blanc and Pinot Noir, our Brut Rosé is coral in color with aromas of white cherry and just ripened wild strawberries. Fresh citrus acidity is balanced by minerality and a brioche and shortcake finish.
Whole cluster pressing is utilized to maximize the delicate aromas and flavors of the grapes while showcasing the Limoux terroir. Each vineyard lot is fermented separately and then blended and bottled. The light coral color is achieved through previse blending of Pinot Noir with the Chardonnay and Chenin Blanc.
Made in the méthode traditionnelle, the wine then spends 15-18 months on the lees before being disgorged.
